LENTIL SUPREME SHEPHERD’S PIE
A lovely twist on traditional shepherd’s pie, this hearty lentil and vegetable filling topped with a mashed potato crust is a wholesome way to enjoy a lovely dinner together.
LAYERED CHOCOLATE MOUSSE CAKE
I would walk through fire, or at least an un-air-conditioned room in the middle of summer, to have a slice of this gorgeous frozen dessert. Made in a loaf pan and frozen till firm, then sliced to show off the beautiful chocolate and fudge layers, it’s perfect for a hot summer’s day.
EMPANADA HAND PIES
Take delicious homemade Spanish rice, tangy Cheddar cheese and roasted chicken breast, stick it in pie crust, and you’ll have my take on handheld pieces of heaven.
1. In a medium bowl, gently combine Spanish rice, Cheddar cheese, chicken, and olives, if using.
2. On a lightly floured surface, roll out pie dough to about 12 inches (30 cm) in diameter and ¼ inch (0.5 cm) thick. Using a small bowl (I like to use a cereal bowl) or a round cutter, cut dough into rounds about 5 ½ inches (13.5 cm) in diameter. Place ¼ cup (60 mL) rice mixture on one half of each round; fold other half over filling. Seal and crimp edges with a fork. (Or, for a fancy look, take remaining dough scraps, slice into 3 very thin strips, braid, and press around edges of each pie.) Transfer to a baking sheet lined with parchment paper, spacing apart.

MAKE IT NOW
Preheat oven to 400°F (200°C). Bake empanadas in preheated oven for 15 to 20 minutes, until golden brown and hot in the center. Let cool for 10 minutes.
MAKE IT A FREEZER MEAL & COOK FROM FROZEN
Transfer baking sheet with uncooked empanadas to freezer. Freeze for 2 to 3 hours, until solid. Transfer frozen pies to a labeled gallon-size (4 L) freezer bag. Seal, removing as much air as possible, and freeze.
Preheat oven to 400°F (200°C). Place frozen pies on a baking sheet lined with parchment paper. Bake for 25 to 30 minutes, until golden brown and hot in the center. Let cool 10 minutes.
Makes 6 hand pies. 11/2 cups (375 mL) cooked Spanish Rice (page 296), cooled 1/2 cup (125 mL) shredded Cheddar cheese 1/2 cup (125 mL) shredded cooked chicken breast (page 29) 1/4 cup (60 mL) sliced black olives (optional) 1 batch Pie Crust (page 331) or 2 store-bought pie crusts 1 large egg, beaten

Title: This Cookbook Will Save You a Ton of Time
Review: Speaking of time, I don't leave a lot of Amazon reviews because it's so time-consuming, but I had to for this one. This book has saved me so much time that I feel like I should pay more. 😉 I bought this cookbook because my 83-year-old mother-in-law moved into our home, and she's used to eating 3 meals a day. My husband and I don't normally eat that much, but I wanted to provide what she was used to, so I was thrust into a world of cooking more than usual.I work full time from home, so you'd think it would be easy, but it's not. I decided I would have to figure out a way to cook meals ahead of time and store them in the freezer so I could just pull them out as needed.I've collected a lot of cookbooks over the years. I'm really impressed with this one. First of all, not everything freezes well. I remember I froze some apples a few years ago, and they were gross when I thawed them. Freezing foods correctly is definitely an art form.In addition to learning which foods can be frozen, I learned from this cookbook that there's a certain way to wrap them before putting them into the freezer to avoid freezer burn. The author also puts tips for power-cooks who want to spend an entire day cooking so they don't have to cook again for a while. I've been doing that on Saturdays. I cook 5 or 6 of these recipes and store them for the next week. It's genius!!!Now to the recipes. They are really, really good, like the title suggests. I'll list a few of my favorites below.1. Savory Salmon in Foil - This recipe is literally the best baked salmon I've ever tasted. In addition to that, you store the salmon fillets in the freezer in individual packets, so you can pull out 2 or 3 or whatever you need. The remaining salmon fillets can remain frozen.In this recipe, you prepare each salmon fillet in a piece of foil. I mean everything, including the spices and lemon slices on top of the salmon. Then you wrap each one. After thawing, I cook it exactly like the instructions suggest, and it's D E L I C I O U S !!! I've made this recipe several times. It's definitely my number one fave in this book.2. Sweet and Sour Meatballs - My husband likes these meatballs so much that he usually eats a bunch of them before I can even get them into the freezer.In this recipe, you make homemade sweet and sour sauce. Omg, it's so easy and goooood! It doesn't have any weird ingredients either. This one has also become a staple for us. Loooove this one!3. Honey Pork Chops - I think this is the easiest recipe in this book, and they'll be the best pork chops you've ever made. The instructions say to store the 6 pork chops in the sauce in a large ziploc in the freezer. I store 2 ziplocs with 3 pork chops in each in the freezer, so I can stretch this into 2 meals.Actually, I do that with most of the recipes in this book. I divide them into 2 freezer meals because we don't eat that much. These pork chops are juicy and amazing! You'll love them.There's a recipe from this book that I haven't made yet, but I'm about to make it. It's called "Cauliflower Crave Soup." It looks so good in the pictures. Oh, that's another thing, there's a full color picture for each recipe, which I love. I've never gotten into those cookbooks that don't have any pictures.I don't know this author, but in case she reads this review, I'd like to thank you for making this cookbook. It's made a huge impact on our life! Our whole family loves it! xo

Title: Nicely done...love the bulk meals guide!
Review: I got this book for inspiration when preparing meals in bulk for the freezer. This author provides a wonderful bulk meals guide that gives you the amounts needed for a range of quantities, which is unique and probably the very best thing about this cookbook! While I wish there were more recipes without dairy (I'm allergic to dairy), it still provides the inspiration I was seeking for coming up with appealing meals that are reasonably simple to make and healthy.

Title: Great cookbook!
Review: This is a great cookbook, with lots of good ideas for planning foods for the freezer. I like to prepare foods to take to our son's family, and this book gives great ideas for many various varieties of foods. When I include directions for how to finish the preparation, it gives them easy to fix dinners, for when they are too busy to cook for themselves!

Title: Tasty and Accurate
Review: I asked for this cookbook for Christmas and at first I was nonplussed. The recipes did not appear to be that innovative or original. So, I tried a few. Tasty, and the family liked. I tried a few more as 3+ freezer meals. Tasty AND her measurements were spot on. This lady has done her homework. Now, when I stockpile freezer meals this is one of my go-tos.

Review: This cookbook is wonderful! I've made so many dishes out of it. They have all been delicious! I especially love the homemade white sauce. So good I could eat it by itself. Title: Great family recipes!
Review: I hesitated to buy another cookbookâ¦but this is one that I will be using week after week for meal planning! As a mom of 2 young children, we have slipped into resorting to take out or quick, unhealthy meals at home as our evenings have gotten busier. I love that all of the meals in this cookbook can be made ahead of time and frozen. Also, the recipes included in this cookbook are realistic for a family with somewhat selective eaters. I also appreciate that the ingredients are generally whole foods and contain fewer processed ingredients, while still being realistic for weeknight meals. The author provides information on how to plan out freezer meals and includes a grocery list for sample meal plans. So happy with this purchase! Thank you!

Review: This is one of the best cookbooks I have ever bought. Recipes are delicious, instructions are clear and the choice between "eat now" and "freeze for later" is very well laid out. Some of the recipes need a slow cooker but, after trying several of the ones that don't, I've just bought a slow cooker as they sound so good.
