Title: Good recipes
Review: I tried 3 cakes - all of them were good. Not too sweet, which is surprising for an American book. The book gives US and metric measures for the ingredients. However, metric conversions in the book have many mistakes, and I advise to check the numbers yourselves. I used 500 grams of berries in one recipe, and afterwards I calculated myself, and it was supposed to be 250 gr. The cake was too sour because of that.

Title: This book title is TRUE!!!
Review: I planned to take a cheesecake class taught by George Geary at a local cooking school. When I was forced to work on the day of the class, I ordered the book from Amazon and decided this would be my substitute for taking the class.Although I have only tried one of the recipes (Chocolate Cherry Cheesecake), I believe that as I work through the rest of the recipes, they will all be as amazing as this one. I took this one to my family Thanksgiving dinner and everyone just LOVED it!Be sure to read pages 8 through 20 (especially "Basic Techniques for a Perfect Cheesecake"). I have been making cheesecakes for about 25 years and this book supplied me with quite a bit of helpful information regarding the basics. The book has plenty of pictures as well as 13 recipes for sauces/toppings to serve over your finished cheesecake.I can't wait to try more-next on my list are the Turtle Cheesecake and the French Apple Cheesecake.~Lois

Title: Cheesecake Galore!!
Review: I love cheesecake! I mean I LOVE CHEESECAKE!!In the past I have always made the non-oven baked cheesecakes and that is how I got into cheesecakes! But then there were discussions about oven baked cheesecakes that pushed my curiosity and a few people began warning me that it was long and laborious process. After considering several books, I decided to go with this one and I am happy that I did. I don't mind the extra work and time to prepare something that when people try they shower you with praise and positive feedback as a reward for the extra effort.I will be honest, I have only tried a couple of recipes and they turned out good, not great, I think I need more practice that all. But there are other recipes in there that I would like to give a go, but I have a tiny fridge that doesn't have plenty of space for me to freeze the base and then store the entire cake in the fridge! I am dying to try the oreo cheesecake and the chocolate cheesecake. But I guess that's my problem... nothing to do with the book, but it is holding me back from trying everything in the book and therefore making my review less informative and objective.I will admit that oven baked cheesecakes do take more time and effort than then non-oven baked type, but nothing really backbreaking and the book does thoroughly walk you through the steps in a simple and understandable manner that is easy to follow. All in all, if you are a cheesecake nut like me, then definitely go for this book and the abundance of recipes will ensure that there is something in there for you!September 2011 Update:======================I have tried the Berry Berry Berry cheesecake and I have to say it is a wonderfully fresh summer time cheesecake that goes beautifully with a cup of afternoon tea! I have also tried the tried the oven baked orange and cranberries cheesecake and that too was great! It's a shame that the book doesn't have pictures of all the recipes!

Title: Wow, wow, wow! What a fantastic baking book...
Review: Who would have thought that I would go from making cakes from box mixes to being able to make the amazing cheesecakes in this book? In the 5 months I have had this book I have made about 9 of the recipes- each one of them easily understandable, clearly explained, and wonderfuly detailed. I always thought that cheesecakes were one of the most difficult things in the world to make, but with this book I have been able to wow my coworkers and my family. The beginning chapter is particularly helpful- it gives the novice cheesecake baker tons of useful tips and tricks for creating the recipes in the book. It is one of my favorite baking books ever- and worth every penny.

Title: Perfect cookbook
Review: I purchased this book in 2004 when I first decided I wanted to learn everything I could about making cheesecakes that were simple, or sophisticated or complex in flavor. This book is all of those things. I love that George Geary took the time to explain to us what is necessary to make a top notch cheesecake. When following his advice, tips and steps it is possible to make decent cheesecakes. I made the chocolate espresso swirl.....then the book sat for awhile, I revisited it again and again but didn't make a cheesecake. I recently started baking for a local restaurant. The cheesecakes in this book have been a huge hit. I have made the pumpkin, the New York, the chocolate espresso swirl and the orange cranberry. Each one has been well received with a thumb's up for flavor, presentation and taste. Thanks George!!!

Title: Best Cheesecake book
Review: I have tried various recipes from this book and all of them have been quite excellent! At first I was a little put off with some of the recipes using 4 packages of cream cheese instead of only 2 (which is what I'm used to)and using this much for home consumption seems a bit excessive to me. SO I tried halving the recipes for the fillings that call for 4 packages and made them 2 instead (every filling ingredient was halved as well) but I still retained the same amount for the crust. The results were perfect and just right for us! Glad I decided to do this!I'm glad that Geary included a bunch of no bake recipes which is so convenient to make when you don't have much time to bake....the chocolate mocha chunk no bake cheesecake was spectacular! I also particularly liked his selection of nutty cheesecakes and tropical ones such as the pina colada.
